Banana Cassava Collagen Pancakes

My easy go to Banana Cassava flour and collagen Pancakes.

They are fluffy and delicious the entire family will love. Another great thing about these they are gluten free, grain free, can be made dairy free and sugar free. Although we do like drizzle some maple syrup over the top. Enjoy!

Serves 2

Ingredients:

1 cup of of Cassava flour - I use Three Spades

1 banana

2 eggs

2 tbsp of collagen powder

2 tbsp of grass-feed butter or ghee (Or coconut oil for dairy free option)

1/2 cup of water

1/2 cup of milk of choice - I use raw milk or coconut milk

1 tsp of baking powder

1 tsp of apple cider vinegar

Garnish: Yogurt of choice, maple syrup and berries of choice.

Instruction:

  1. Add all ingredients to a blender and blend to a smooth liquid

  2. Heat pan and add butter, Ghee or coconut oil to a fry pan

  3. Pour liquid pancake batter to pan and cook until bubbles appear and flip!

  4. Repeat until the mixture finished

  5. Serve with Coconut or Goats Yogurt, Drizzle with Maple Syrup and berries of choice. I like to use blue berries or raspberries.
