Chicken Ginger & Kaffir Lime Soup

Slow cooker Chicken, Ginger, Bone broth & Kaffir Lime Soup..

The best soup if your family is under the weather. It’s also easy and all done in a slow cooker or one pot. Simple and tasty!

Serves 4

Ingredients:

2 Large Chicken Breasts - Or 3 Small

4 Cups of Bone Broth Beef or Chicken (Home Made or from a Jar) - I use Gevity

1 to 2 Cups of filtered or spring water (Use more or less depending on amount and consistency - Depending on pot size)

2 Kaffir lime leaves

1 Red Onion

1 Carrot

2 Stalks of celery

2 cups Buckwheat Pasta or any other gluten free alternative pasta you like

Half a lemon

2 Tbsp of Ginger Fresh finely grated - Or can use powder form

1 Tsp of turmeric fresh finely grated or power

Salt and Pepper

Optional: Chilli flakes

Instructions:

  1. Dice Carrots, Celery, Onion add to pot or slow cooker. If using a Pot or Slow cooker that saute’s for a few minutes until golden brown. Not necessary if you don’t have time or are able to)

  2. Add finely cut Kaffir Lime leaves, grated ginger and turmeric and squeeze half the lemon and add to the pot or slow cooker

  3. Add Bone Broth and Water with Salt and Pepper and Chilli Flakes if using

  4. Add raw Chicken breasts - Turn on slow cooker to low. Or very low heat if using pot.

  5. Cook for around 4 hours. Come back to the pot and with two forks shred chicken and let continue to cook for another hour.

  6. Around 10 minutes before serving add Buckwheat pasta

  7. Serve and let cool for a couple of minutes before eating.
